Fermentation

A clean, smooth fermentation, free from off-flavour formation, decides on alcohol yield and positive sensory evaluation of the distillates. The quality of the distillates is distinctly marked by the yeast. To be on the safe side, distilleries apply specially selected dry yeasts for distilling mashes with great success. They ferment out smoothly and completely with optimal alcohol yield and excellent sensory evaluation unaffected by undesirable foreign microorganisms.

Spiriferm
Efficient dry selected yeast for a quick and fully completed fermentation of distilling mash and must. Saccharomyces cerevisiae, yeast strain LW-490-15.

Efficient dry selected yeast for aroma intensification. A Saccharomyces cerevisiae (var. bayanus) providing for a safe and fully completed fermentation of distilling mashes and musts, also at temperatures around 15°C.
