Fermentation

When the starch contained in floury raw materials is converted, maltose and glucose are the end products formed in this enzymatic degradation reaction. To ferment these sugars, specially adapted dry selected yeasts are required.

Oenoferm® C2
is a strongly fermenting dry pure culture yeast of a special Saccharomyces cerevisiae selection. Its temperature tolerance and adaptation to high sugar concentrations and thus to high alcohol contents, make Oenoferm® C2 particularly suitable to ferment distilling mashes at high fermentation temperatures also in the high gravity process.

Special yeast nutrient preparations. For the promotion of yeast propagation and to assure a quick fermentation onset and a fully completed fermentation.
