Citrus juices and juices from tropical
fruits are consumed all over the world. Without doubt orange
juice preponderates but also grapefruit and lemon juice play
a role, also in clarified form. The numerous tropical and exotic
fruits are getting more and more popular and offer infinite
combination possibilities for making new, innovative beverages.
Very frequently, they are characterized by attractive colours,
derived from anthocyanins and carotinoids. Once again it is
most important to already extract as much colour as possible
from the mash and to preserve it carefully afterwards. Furthermore,
the stability of the resulting finished juice should be considered
in every individual case, i.e. clear juice or cloud-stable juice.
