Sparkling wine-making

The improvement and finishing procedures of wine and sparkling wine require a very particular technology and above all, special dry selected yeasts. In spite of relatively low nutrient amounts and already present high alcohol contents, the yeasts must perform the second fermentation. Only specially selected bayanus strains can be used for this purpose.

For bottle fermentation moreover the choice of the adequate riddling aid is important to provide for good riddling.

Gush-ex®
A target-oriented, specifically prepared protein preparation. The product is conceived for the removal of those substances in base wines for sparkling wine-making and in the not yet finished, but already fermented sparkling wine without SO2 and sugar dosage, which cause gushing. Thus the very undesirable development of a gushing effect is prevented.
