Increased heavy metal contents by contact
of the wine with metal devices and equipment, or after sulphide
off-flavour treatment, are still occuring frequently. The performance
of a blue fining can be avoided by complexation of the heavy
metals with Ferroplex.
Ferroplex A product for the prevention of metal haze on the basis of a balanced combination of gum arabic and citric acid. Ferroplex prevents that metals present in the wine react with other wine components and lead to cloudiness.
Ferrozin The blue fining of wines is carried through with Ferrozin, a potassium ferrocyanide, also called potassium hexacyanoferrate-II or yellow prussiate of potash. Ferrozin reduces increased heavy metal contents to innocuous quantities.
Ferrozin is available in crystalline form or as pellets for smaller dosages.
