Red Wine Harmonization

Almost all wines can be slightly „tuned“ to achieve an optimal result. A so-called “finishing” process is used shortly before bottling for rounding off the wine and to smooth off-flavours. For flavour optimisation it is favourable to carry out pre-tests.

Available technologies for red wine taste harmonising (also short term) vary from tannin reduction up to targeted dosage of oenological tannins.
